We have a unique opportunity for a Chef De Partie to join our team.

THE ROLE – CHEF DE PARTIE

We have Chef De Partie opportunities to suit a wide variety of culinary styles. Choose from our formal 2 rosette restaurant The Cameron Grill, our family friendly Boat House with its seafood and pizza, The Clubhouse at the Carrick serving popular everyday options, our new Tavern Bar serving pub classics, our join our Banqueting and Events team or Pastry brigade.

Whatever the style, our menus are created around locally sourced fine food and are prepared and presented with passion creativity and flair.

In whichever kitchen environment you choose, as Chef De Partie your scope will be to support your Head Chef by leading your shift and overseeing in the day-to-day performance of your section.

Key things you will be responsible for:

Proficiency in the tasks of Apprentice and Commis Chefs, including mise en place

Cleaning schedules, food storage, food preparation, and service cleardown

Leading daily briefings and handovers

Completion of daily food hygiene checks and due diligence records

Organising the daily workload, delegating tasks and co-ordinating breaks in your section

Consistent production of food to recipe and presentation standards in SOP’s

Monitoring performance in via checklists and SOPs

Providing feedback to the junior team to support improved performance

Supporting with any shift challenges

On job training of new employees

Support management of allergens and team awareness

Departmental requisitions, stock control, and recording of wastage

TO BE ELIGIBLE TO APPLY YOU WILL ALSO NEED:

SVQ in Food Production at SCQF Level 5 or equivalent qualification or equivalent industry experience
Level 2 Food Hygiene Qualification
Current or recent experience as Demi Chef De Partie or Chef De Partie, in a quality hotel or restaurant
To be thorough, with keen attention to detail
Ability to quickly build excellent working relationships
A flexible approach to work
Excellent communication skills
Basic IT skills with knowledge of Office software and ability to use technology (we use systems such as Procure Wizard/ ResDiary)
