Head Chef – New Opening – Surrey – £37k + Bonus + Benefits

This is an exciting opportunity for an experienced Head Chef to join an opening team of this new and beautiful venture, located within a grand historic building in vast landscaped gardens, offering a high standard of service and cuisine to both residents and guests. You will be involved in the launch of this amazing place, which offers a taste of luxury and comfort in one of the most stunning places in the area. This will include working with the General Manager to deliver a menu that offers traditional English cuisine with influences from Europe and further afield, dietary and allergy considerations etc. You will also build up a brigade and ensure you are able to deliver excellence and great standards from the launch, which will include being a hands-on Head Chef, leading by example.


* £37k + quarterly bonus

* Ensure high levels of cleanliness throughout the kitchen

* Deliver consistent top-quality food during service

* Ensure all kitchen deliveries are correctly checked and stored diligently

* Illustrate an ability to work throughout all areas of the kitchen

* Facilitate stock rotation

* Facilitate a clear understanding of Profit & Loss & Gross Profit control

* Assist team members in thorough preparation of food before during and after service

* Manage, develop and mentor entire kitchen brigade

* Work closely with the General Manager to ensure the successful delivery of events

* Ensuring all daily check lists and HACCP are completed

* Incorporate new legislations into all menu designs

* Work with HR team and the recruiters in the recruitment of kitchen staff

* Design & develop menu specification sheets

* Special events menu planning and costing

* Demonstrate an awareness of customer needs and requirements i.e. allergens, medication etc.


* Experience in a similar role within a Hotel, Restaurant or similar environment

* An excellent level of culinary knowledge and skills, with experience catering for guests in a restaurant, lounge, Events etc.

* Food hygiene level 4

* Knowledge of GP’s, KPI’s and their impact on the business

* Good level of computer literacy

* Previous experience cooking for people with strict dietary requirements

* Full driving licence and own vehicle

* Experience with complaint handling
